Sweet potato home fries

We love breakfast for supper. I probably make it at least once every couple weeks. See, all of us really enjoy breakfast foods, but none of us enjoy eating big meals early in the morning. We are more brunch—or “brinner,” as we call it—people.

I try to keep our breakfast suppers from falling into the rut of eggs, potatoes and toast. I make quiche, pancakes, casseroles, waffles and egg sandwiches. I’m always trying to switch it up. But last week when it was going to be just eggs, potatoes and toast I still found a way to update it!

Sweet potato home fries. Yep, the size, shape and flavors we love in the white variety, and just as yummy! These are perfect for whatever time of day you eat your favorite breakfast.

Sweet Potato Home Fries

  • Ingredients

    • 6 medium sweet potatoes, peeled and cubed
    • 2 Tbsp vegetable oil
    • 1 tsp paprika
    • 1 tsp dried parsley
    • tsp garlic powder
    • tsp dried oregano
    • tsp cinnamon
    • Salt
    • Pepper

    Directions

    1. Preheat oven to 400F. Coat a baking sheet with nonstick spray.

    2. In a large bowl combine potatoes, oil, paprika, parsley, garlic powder, oregano, cinnamon, salt and pepper. Stir well to combine. Allow to sit at room temperature for 30 to 45 minutes.

    3. Place potatoes on prepared pan, spreading evenly into one layer. Cook for 30 minutes, rotating the tray halfway thorough, or until fork tender. Sprinkle with extra parsley before serving.
