Surprise your family at supper with their favorite morning meal. Serve these egg-in-hole toasts sandwich-style.

Egg in a Hole Sandwiches

Ingredients

  • Butter
  • 2 pieces of bread

Florentine Egg in a Hole:

  • cup frozen chopped spinach, thawed
  • 1 Tbsp cream cheese
  • Salt
  • Pepper
  • 1 egg
  • Shredded mozzarella cheese

Tex-Mex Egg in a Hole:

  • 1 egg
  • Salt
  • Pepper
  • 3 Tbsp canned black beans (drained and rinsed)
  • 3 Tbsp shredded Mexican blend cheese, divided
  • 2 Tbsp crushed tortilla chips
  • 1 Tbsp chopped cilantro
  • cup salsa, for dipping

BTA Egg in a Hole:

  • 1 egg
  • Salt
  • Pepper
  • 1 small sliced tomato
  • 2 slices cooked bacon
  • sliced ripe avocado

Directions

Start Here:

  1. For each sandwich, butter both sides of two pieces of bread. Use a round cookie cutter or a glass to cut a hole from the middle of 1 slice.

  2. Place both slices (save cut-out hole for another use) in a skillet, turn heat to medium, and cook 2 minutes or until golden brown. Flip bread, reduce heat, then add your choice of toppings from those below.

Florentine Egg in a Hole:

  1. Microwave spinach with cream cheese, salt and pepper until hot.

  2. Crack egg into the hole of bread; sprinkle with salt and pepper. Cover skillet and cook 2 minutes.

  3. Remove lid; spread spinach mixture on second slice of bread; top both slices with shredded mozzarella cheese. Cover pan; cook until egg is set and cheese is melted. Sandwich slices together.

Tex-Mex Egg in a Hole:

  1. Crack egg into the hole of bread; sprinkle with salt and pepper. Cover and cook on low, about 2 minutes.

  2. Top other slice of bread with black beans and 2 Tbsp cheese. Cover and cook until egg is set and cheese is melted. Sandwich slices together. Sprinkle with 1 Tbsp cheese, chips and cilantro. Serve with salsa, for dipping.

BTA Egg in a Hole:

  1. Crack egg into the hole of bread; sprinkle with salt and pepper. Cover and cook on low, about 2 minutes.

  2. Top the other bread slice with tomato, bacon and avocado. Cover and cook until egg is set. Sandwich slices together.
